Winery Operations, A.A.S.

Overview

The Winery Operations program is centered on providing theory and hands-on application to students interested in the fast growing Niagara Wine Region. Students will work at local vineyards, learning to plant, prune, harvest, crush and make wine. Through interaction with wine professionals, students will be prepared to enter the wine industry at above entry-level positions. The program also contains a series of business electives that will cover the business aspect of operating a winery.

Program Learning Outcomes

The assessment of student learning outcomes is not only a key indicator of program effectiveness, it is also one of the standards of excellence identified by the Middle States Commission (Standard 5) and is required through the SUNY assessment initiative.

  • Demonstrate an understanding of management principles
  • Demonstrate knowledge of viticulture and wine making
  • Explain the characteristics associated with each of the distilled spirits
  • Discuss the variations that determine coffee qualities
  • Explain the day-to-day operation of a winery
  • Determine the variety of the beverage tasted
