Camp Cook

Summer Position – June 3rd (start date is flexible) through August 16th

We are seeking a talented individual to oversee food production at Camp Rushford in Caneadea, NY. Camp Cooks supervise all kitchen operations, including management of staff and volunteers working in the kitchen. They oversee the preparation of food for 50 campers and 15 staff members each week for 9-10 weeks over the summer.

This is a unique opportunity to work our beautiful and rustic location in Western NY. Our popular and engaging conservation camps draw 11–17-year-old youth from across NYS for life changing experiences in the outdoors. The camp season runs from June 3rd (start date is flexible) through August 16th, and the work week goes from Sunday dinner through Friday lunch.

Camp Cooks earn $19.85/hour plus room and board, if desired, for a maximum 40-hour work week. Applicants must have two years of experience in the storage, preparation, cooking, and dispensing of food. Sixty credit hours in a degree related to culinary arts; or one year of experience as described above and 30 credit hours in a degree related to culinary arts. This is a civil service position, so employees have the option to join the CSEA union (which includes some tuition aid/reimbursement) and the NYS retirement fund. For the right cook, this can be a reoccurring summer position.

The camp cook is responsible for the planning, cooking and serving (60-70 people) for all camp meals. In addition, the cook maintains all kitchen and dining hall supplies, materials and equipment. They must be neat, reliable, punctual, flexible and responsible. The cook must be able to prepare menus and order food within a strict budget. They also must have knowledge of nutritional dietary needs of campers and be familiar with New York State Department of Health (DOH) Regulations pertaining to storage, preparation and serving food.

Specific duties include, but not limited to:
– prepares menus and meals in consultation with camp supervisor;
– is responsible for the proper storage and record keeping of all food items;
– Prepares weekly orders in conjunction with central office staff.

Requirements:
• Two years of experience in the storage, preparation, cooking and dispensing of food.
OR
• 60 credit hours in a degree related to culinary arts.
OR
• One year of experience as described above AND 30 credit hours in a degree related to culinary arts.
• A valid driver’s license is preferred.

NOTE: A candidate may use the camp cook position as part of an internship to complete their requirements for their two year or higher culinary degree.
