Leaping Caramel Corn

Ingredients

  • Cooking spray
  • 4 qts of plain popped popcorn
  • 1 cup brown sugar
  • .5 cup corn syrup (light or dark)
  • .5 tsp salt
  • .5 tsp baking soda
  • 1 tsp pure vanilla extract
  • .5 cup butter

Directions

  1. Spray shallow pan with cooking spray. Add popcorn and place in a preheated 250-degree oven while preparing caramel
  2. In a 2qt saucepan, mix brown sugar, corn syrup, butter, and salt. Stir constantly, bring to a boil over medium heat. Boil 5 minutes without stirring.  Remove from heat. Stir in baking soda and vanilla; mix well
  3. Pour over warm popcorn, stirring to coat evenly.
  4. Bake for 45 minutes at 250, stirring occasionally.
  5. Remove from oven and spread on foil that has been sprayed with cooking spray.
  6. Cool; break apart. Store in a tightly covered container.

TIP:  Add your favorite nut: after you have poured the caramel over your popcorn, mix in about 3/4 cup of nuts
