10 Lords A-Leaping
Leaping Caramel Corn
Ingredients
- Cooking spray
- 4 qts of plain popped popcorn
- 1 cup brown sugar
- .5 cup corn syrup (light or dark)
- .5 tsp salt
- .5 tsp baking soda
- 1 tsp pure vanilla extract
- .5 cup butter
Directions
- Spray shallow pan with cooking spray. Add popcorn and place in a preheated 250-degree oven while preparing caramel
- In a 2qt saucepan, mix brown sugar, corn syrup, butter, and salt. Stir constantly, bring to a boil over medium heat. Boil 5 minutes without stirring. Remove from heat. Stir in baking soda and vanilla; mix well
- Pour over warm popcorn, stirring to coat evenly.
- Bake for 45 minutes at 250, stirring occasionally.
- Remove from oven and spread on foil that has been sprayed with cooking spray.
- Cool; break apart. Store in a tightly covered container.
TIP: Add your favorite nut: after you have poured the caramel over your popcorn, mix in about 3/4 cup of nuts
